Noodle Blueprint

This one isn't really a recipe, but rather an idea I've taken from Ethan Chlebowski's cooking channel. You don't have to make exactly the same recipe every time! Change up the noodles, or the meats, vegetables, sauce, you name it.

This idea can be used to make use of leftovers in your fridge.

Now you won't have to throw away the other half of that head of cabbage you bought.

Baked Salmon

Recently becoming a go-to in our kitchen.

  • Salmon (either made with spices from our spice rack, or whatever Costco puts on it)

  • Asparagus - Drizzled with salt, pepper, and olive oil. Multiple cooking options here:

    1. Baked in the oven until they turn crisp (~18 minutes @ 400F)

    2. Microwave for 5 minutes (until they are soft enough to melt like butter in your mouth)

  • Cherry tomatoes - baked in the oven until they pop

  • Rice

Tacos / Burritos

We always call it taco night, but I'm pretty sure these are classified as burritos.

Base

  • Flour tortillas

  • Sour cream

  • grated mexican cheese blend

  • Lean ground turkey (could also substitute for practically any meat)

  • Rice

  • Austin's special sauteed corn

Optionals

  1. Caramelized onion

  2. sauteed peppers

  3. jalapenos

  4. avocado

  5. lettuce

Jalapeno Orange Juice Chicken with Sauteed Cabbage

This one taken from one of my favorite Blue Apron recipes. It's pretty difficult to mess up.

  • Chicken breast

  • sautéed cabbage - drizzle with olive oil, salt, pepper, and red pepper flakes for some kick. Sauté this in a pan exactly as if you are caramelizing an onion. It's okay if it looks like a lot in the pan. It'll reduce to about 50% - 75% of its original size by the time it's ready.

  • (Interchangeable) diced potatoes - we've had this meal with corn, rice, and pasta before. Just looking for something not so extravagant to fill up the rest of the plate (and your stomach)


The glaze

  • Pickled jalapenos

  • Orange juice - it tastes better if you squeeze actual oranges!

  • Honey

Mix all the above in a sauce pan on the stovetop and let it simmer. I usually start with 2 parts orange juice, 1 part honey, and about 2-3 jalapenos per piece of chicken I have. Taste throughout the simmering process to see what you need more of!

Slow Cooker Vodka Penne

Very easy recipe with very little ingredients. All the seasonings are ones I can find on my spice rack, and then it's just 4 items to find at the grocery store (chicken, marinara, penne, and heavy cream).

Haven't tried adding vodka yet, but if it's in the name then why not?

The first time I made this, I cooked the chicken alone for 3 hours, then with the pasta for 45 minutes (the short ends of the time ranges) and it still tastes delicious.
